Can you trim off of the sides of the door? If so, how much room is there to take off? Our doorway is about a 1/2" smaller

There is quite a gap between the side and the doors, and between the two doors at the middle. You may find that they will install just fine in the spot you have. Considering the hardware, trimming can only be done at the side that doesn't have the attaching hardware. It would probably leave a less than attractive looking edge, but a good coat of paint could hide that.

It may actually be 79" to fit an 80" opening. Either way you can cut off the TOP inch of the door and PL glue the hardware mounting holes back on using clamps to hold until dry.

It doesn't come preframed like some solid doors. You would need to make your own jamb frame if needed.

Rated 4 out of 5 by Kodiak from Nice once painted I was disappointed in the quality control, when I separated the 2 panel there was a loose screw embedded into the hardwood. They must have closed the 2 panels together without checking closely.This damaged both panels. Since I needed to paint the panels anyway i just repaired the damage with Spackle and let it dry before sanding.I also noticed one of the brackets wasn't formed properly and I needed to bend it to the proper shape. The instructions were very basic and didn't even show the same hardware included in the kit.
